How to Make Cumin Spiced Red Lentil Burgers

  1. Rinse 1 cup of red lentils under cold water. In a medium saucepan, cover the lentils with 2 inches of cold water and bring to a boil over high heat.
  2. Reduce heat to medium-low and simmer for 10 minutes, or until lentils are very tender. Drain well and set aside to cool slightly.
  3. Preheat your broiler.
  4. While lentils cook, heat 2 tablespoons olive oil in a medium skillet over medium-high heat.
  5. Add 1 medium onion, chopped, and cook, stirring frequently, until golden brown (about 6 minutes).
  6. Add 1 cup chopped carrots and 2/3 of 2 cloves garlic, minced, and cook until carrots soften (about 4 minutes).
  7. Stir in 1 teaspoon ground cumin and 1/4 teaspoon cayenne pepper (or more, to taste). Remove from heat.
  8. In a large bowl, combine the cooked lentils, onion-carrot mixture, 1/2 cup breadcrumbs, 3 tablespoons chopped fresh parsley, 2 large eggs, 1 teaspoon salt, and 1/2 teaspoon black pepper.
  9. Gently mix everything until well combined.
  10. Form the mixture into 16 (1/4-cup) sized patties.
  11. Line a baking sheet with foil.
  12. Brush the foil and both sides of the patties with the remaining 1/4 cup olive oil.
  13. Broil for 3 minutes per side, or until golden brown and heated through.
  14. Meanwhile, prepare the yogurt sauce: In a small bowl, whisk together 1/2 cup plain yogurt, 1 tablespoon lemon juice, the remaining 1/3 of the minced garlic, and 1 tablespoon chopped fresh parsley.
  15. Serve the hot lentil burgers immediately, topped with the yogurt sauce (optional).
