Ingredients for Awesome Sambhar

  • Dried Red Lentils
  • Carrot
  • 1 cup water (plus 1/2 - 1 cup extra as needed)
  • 2 medium potatoes, peeled and cubed
  • 1 tablespoon olive oil
  • 1 teaspoon mustard seeds
  • Ground Coriander
  • Ground Cumin
  • Ground Turmeric
  • Dried Chili
  • Curry Powder
  • Juice of 1/2 lemon
  • 1 teaspoon salt (or to taste)

How to Make Awesome Sambhar

  1. Rinse 1 cup of toor dal (split pigeon peas) and 1 cup of water in a large pot. Add 2 medium carrots, peeled and chopped, and bring to a boil.
  2. Reduce heat to medium-low, partially cover, and simmer for 20 minutes, stirring occasionally.
  3. Add 2 medium potatoes, peeled and cubed, and cook for another 15-20 minutes, or until potatoes are tender. Add 1/2-1 cup of water if the mixture becomes too thick.
  4. While the lentils and potatoes simmer, heat 1 tablespoon olive oil in a small frying pan over medium heat.
  5. Add 1 teaspoon mustard seeds and stir for 1 minute, or until they begin to pop.
  6. Reduce heat to low. Add 1/2 teaspoon turmeric powder, 1/2 teaspoon cumin powder, 1/4 teaspoon asafoetida (hing), 1/2 teaspoon chili powder (adjust to your spice preference), and 1/4 teaspoon coriander powder. Sauté for 1 minute.
  7. Remove from heat and set aside the spice mixture.
  8. Once the potatoes and lentils are cooked, stir in the spice mixture, 1 teaspoon salt (or to taste), and the juice of 1/2 a lemon.
