Ingredients for Awesome Sambhar
- Dried Red Lentils
- Carrot
- 1 cup water (plus 1/2 - 1 cup extra as needed)
- 2 medium potatoes, peeled and cubed
- 1 tablespoon olive oil
- 1 teaspoon mustard seeds
- Ground Coriander
- Ground Cumin
- Ground Turmeric
- Dried Chili
- Curry Powder
- Juice of 1/2 lemon
- 1 teaspoon salt (or to taste)
How to Make Awesome Sambhar
- Rinse 1 cup of toor dal (split pigeon peas) and 1 cup of water in a large pot. Add 2 medium carrots, peeled and chopped, and bring to a boil.
- Reduce heat to medium-low, partially cover, and simmer for 20 minutes, stirring occasionally.
- Add 2 medium potatoes, peeled and cubed, and cook for another 15-20 minutes, or until potatoes are tender. Add 1/2-1 cup of water if the mixture becomes too thick.
- While the lentils and potatoes simmer, heat 1 tablespoon olive oil in a small frying pan over medium heat.
- Add 1 teaspoon mustard seeds and stir for 1 minute, or until they begin to pop.
- Reduce heat to low. Add 1/2 teaspoon turmeric powder, 1/2 teaspoon cumin powder, 1/4 teaspoon asafoetida (hing), 1/2 teaspoon chili powder (adjust to your spice preference), and 1/4 teaspoon coriander powder. Sauté for 1 minute.
- Remove from heat and set aside the spice mixture.
- Once the potatoes and lentils are cooked, stir in the spice mixture, 1 teaspoon salt (or to taste), and the juice of 1/2 a lemon.
- Serve hot with rice and a side salad. Garnish with fresh cilantro (optional).
