How to Make Eggs Baja

  1. Cook 4 slices bacon in a nonstick frying pan over medium-high heat for 4-5 minutes per side, until crisp. Remove and drain on paper towels.
  2. Wipe the pan clean.
  3. Set pan over medium heat. Crack 2 large eggs into the pan and cook for 2-5 minutes for soft yolks, or longer for firmer yolks, flipping once if desired.
  4. Season eggs with salt and pepper to taste.
  5. While eggs cook, preheat your broiler.
  6. Place 2 slices of bread on a 12x15-inch baking sheet.
  7. Broil for 1-2 minutes, then flip and top each slice with 2 slices of tomato (about 1/4 inch thick), 1-2 jalapeño slices (adjust to your spice preference), and 1 ounce of pepper jack cheese.
  8. Broil for another 2-3 minutes, or until the cheese is melted and bubbly.
  9. Top each toasted bread slice with a cooked egg and a slice of bacon.
  10. Sprinkle with chopped cilantro before serving.
