How to Make Gobi Ka Paratha

  1. In a large bowl, combine the cauliflower, ginger-garlic paste, green chilies, turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well and let it sit for 15 minutes to allow the flavors to blend.
  2. Heat a pan and add 2 tablespoons of oil. Add the onion and sauté until golden brown. Add the cauliflower mixture and cook until the cauliflower is tender and slightly browned, about 10-12 minutes. Set aside to cool.
  3. In a large bowl, combine the whole wheat flour, salt, and ghee/oil. Add water gradually and knead into a soft and pliable dough. Let the dough rest for at least 15 minutes.
  4. Divide the dough into small, equal-sized balls. Roll out each ball into a thin circle. Spread a spoonful of the cauliflower mixture evenly over the circle.
  5. Bring the edges of the dough together and gently pinch to seal the filling inside. Gently roll the stuffed dough circle into a slightly thicker paratha.
  6. Heat a flat griddle or tawa over medium heat. Cook the paratha on both sides until it's golden brown and cooked through, applying a little more ghee/oil while cooking for that extra crisp.
  7. Serve hot with your favorite yogurt, pickle, or chutney.
