  1. Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan, or two mini loaf pans.
  2. In a medium bowl, whisk together 1 ½ cups all-purpose flour, 1 teaspoon baking soda, ½ teaspoon baking powder, ½ teaspoon salt, and ½ teaspoon ground cinnamon (optional). Set aside.
