How to Make Banana Bread With Cauliflower
- Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan, or two mini loaf pans.
- In a medium bowl, whisk together 1 ½ cups all-purpose flour, 1 teaspoon baking soda, ½ teaspoon baking powder, ½ teaspoon salt, and ½ teaspoon ground cinnamon (optional). Set aside.
- In a large bowl, cream together ¾ cup granulated sugar and ½ cup vegetable oil until light and fluffy.
- Beat in 2 large egg whites until combined.
- Mash 3 ripe bananas with a fork. Add mashed bananas and 1 cup cauliflower puree to the wet ingredients. Stir in 1 teaspoon vanilla extract.
