How to Make Gyoza Guo The Jiao Zi

  1. Heat 1 tablespoon sesame oil and 1 tablespoon vegetable oil in a large skillet or wok over medium heat. Add 2 minced cloves garlic and 1 tablespoon minced ginger; sauté for 1 minute.
  2. Add 1 cup finely chopped shiitake mushrooms, 1 cup finely shredded cabbage, 2 tablespoons chopped chives, 2 tablespoons chopped scallions (spring onions), and 1/2 cup crumbled firm tofu.
  3. Increase heat to high and stir-fry for 2-3 minutes until vegetables are slightly softened.
  4. Add 2 tablespoons soy sauce and 1/2 teaspoon salt. Stir-fry over high heat for another 2-3 minutes, until most of the liquid has evaporated.
  5. Sprinkle in 1 tablespoon cornstarch (corn flour) and stir quickly to combine.
  6. Transfer the filling to a bowl and let it cool completely.
  7. Place a teaspoon of the filling in the center of each wonton wrapper (about 20-24 wrappers). Moisten the edges of the wrapper with water.
  8. Fold the wrapper in half to form a half-moon shape, pleating the edges to seal.
  9. Heat 2 teaspoons sesame oil in a large skillet or wok over medium heat. Arrange 10-12 gyoza in a single layer.
  10. Cook for 2-3 minutes per side, until the bottoms are golden brown and crispy.
  11. Pour 1/4 cup water into the skillet, cover, and cook for 2-3 minutes, or until the water is absorbed and the gyoza are cooked through.
  12. If needed, remove the lid and shake the pan to ensure even cooking and prevent sticking.
  13. Transfer the cooked gyoza to a serving plate and garnish with chopped chives.
  14. Repeat steps 9-13 with the remaining gyoza.
  15. Serve immediately with your favorite dipping sauce (soy sauce, rice vinegar, chili oil are great options).
