How to Make Open Sesame Noodles
- Cook 1 pound pasta in a large pot of salted boiling water until al dente (about 8-10 minutes).
- Drain the pasta, reserving about 1/2 cup of pasta water.
- While the pasta cooks, steam 1 large head of broccoli florets until tender-crisp (about 5-7 minutes). Set aside.
- In a large bowl, whisk together: 1/4 cup soy sauce, 2 tablespoons sesame oil, 2 tablespoons rice vinegar, 1 tablespoon honey or maple syrup, 1 tablespoon grated fresh ginger, 1 clove minced garlic, and 1/4 teaspoon red pepper flakes (optional).
- Add the hot cooked pasta to the sauce and toss to coat. Add a little reserved pasta water if needed to loosen the sauce.
- Stir in 1 cup cooked chicken (diced or shredded), the steamed broccoli, and 1/2 cup thinly sliced red onion.
- Toss in 1/4 cup chopped fresh cilantro.
- Sprinkle generously with sesame seeds before serving.
