Ingredients for Open Sesame Noodles

  • Vermicelli
  • 2 tablespoons rice vinegar
  • Reduced Sodium Soy Sauce
  • Vegetable Oil
  • 1 tablespoon grated fresh ginger
  • Chili Garlic Sauce
  • 2 tablespoons sesame oil
  • Green Onions
  • 1 large head broccoli
  • Cooked Chicken
  • Fresh Cilantro
  • sesame seeds (to taste)

How to Make Open Sesame Noodles

  1. Cook 1 pound pasta in a large pot of salted boiling water until al dente (about 8-10 minutes).
  2. Drain the pasta, reserving about 1/2 cup of pasta water.
  3. While the pasta cooks, steam 1 large head of broccoli florets until tender-crisp (about 5-7 minutes). Set aside.
  4. In a large bowl, whisk together: 1/4 cup soy sauce, 2 tablespoons sesame oil, 2 tablespoons rice vinegar, 1 tablespoon honey or maple syrup, 1 tablespoon grated fresh ginger, 1 clove minced garlic, and 1/4 teaspoon red pepper flakes (optional).
  5. Add the hot cooked pasta to the sauce and toss to coat. Add a little reserved pasta water if needed to loosen the sauce.
  6. Stir in 1 cup cooked chicken (diced or shredded), the steamed broccoli, and 1/2 cup thinly sliced red onion.
  7. Toss in 1/4 cup chopped fresh cilantro.
  8. Sprinkle generously with sesame seeds before serving.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
