How to Make Healthy Greek Pizza

  1. Heat 2 tablespoons of olive oil in a sauté pan over medium heat.
  2. Add 1/2 medium red onion (thinly sliced), 1/4 teaspoon salt, and a few pinches of black pepper.
  3. Sauté for 4-5 minutes, until the onion is tender.
  4. Add 1 clove garlic (minced) and sauté for 1 minute.
  5. Transfer the sautéed onion and garlic to a bowl.
  6. Heat 2 tablespoons of olive oil in the same pan over high heat.
  7. Add 5 ounces fresh spinach and 1/4 teaspoon salt, a few pinches of black pepper, and 1 clove garlic (minced).
  8. Wilt the spinach until bright green (about 1 minute). Remove from pan and place in a strainer to cool.
  9. Squeeze out excess moisture from the spinach. Coarsely chop and toss with 1 teaspoon lemon zest.
  10. Preheat oven to 500°F (260°C).
  11. Roll out your pizza dough (store-bought or homemade) and place it on a lightly oiled pizza pan or well-floured pizza peel.
  12. Brush the dough with 1 tablespoon olive oil.
  13. Spread the sautéed onion mixture evenly over the dough, followed by the spinach mixture.
  14. Sprinkle evenly with 1/2 cup Kalamata olives (halved), 1/2 cup crumbled feta cheese, and 1 cup shredded mozzarella cheese.
  15. Bake for 8-12 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
  16. Remove from oven and sprinkle with 1 tablespoon grated Parmesan cheese and 1 teaspoon fresh rosemary (chopped).
