How to Make Impossible Taco Pie

  1. Preheat oven to 375°F (190°C).
  2. Prepare the Impossible™ meat: Brown the Impossible™ Burger in a large skillet over medium heat, breaking it up with a spoon. Drain off any excess grease.
  3. Add the chopped onion and minced garlic to the skillet and cook until softened, about 5 minutes.
  4. Stir in the taco seasoning, diced tomatoes, black beans, and corn. Cook for another 5 minutes, allowing the flavors to meld.
  5. Roll out one pie crust and press it into a 9-inch pie plate.
  6. Pour the Impossible™ taco mixture into the pie crust.
  7. Top with the shredded cheddar cheese.
  8. Cover with the second pie crust, crimping the edges to seal. Cut several slits in the top crust to allow steam to escape.
  9. Bake for 30-35 minutes, or until the crust is golden brown and the filling is bubbly.
  10. Let cool slightly before serving. Top with sour cream or Mexican crema and avocado slices, if desired.
