How to Make Jamaican Marinade
- In a medium bowl, slowly whisk in 1/4 cup olive oil into 2 tablespoons of Jamaican jerk seasoning until smooth.
- Add 1/4 cup soy sauce, 2 tablespoons lime juice, 1 tablespoon brown sugar, 1 teaspoon ground allspice, 1 teaspoon ground ginger, 1/2 teaspoon cayenne pepper (or more, to taste), 2 cloves garlic (minced), and 1/4 cup chopped scallions.
- Stir until all ingredients are well combined.
- Refrigerate for at least 30 minutes, or preferably up to 4 hours, to allow flavors to meld. The longer it marinates, the more flavorful your chicken will be!
- Use to marinate approximately 12 chicken wings. Leftover marinade can be stored in the refrigerator for up to 3 days.
