How to Make Masala Chai

  1. Gently crush the cardamom pods. Combine the cinnamon stick, crushed cardamom pods, and cloves in a piece of cheesecloth or a reusable spice bag. Tie securely with kitchen twine.
  2. In a medium saucepan, combine the spice bag and 5 cups of water. Bring to a boil over medium-high heat.
  3. Once boiling, reduce heat to low, cover, and simmer for 15 minutes to allow the spices to infuse the water.
  4. Add the black tea leaves to the simmering spiced water. Steep for 2-3 minutes, or to your desired strength.
  5. Remove the spice bag from the saucepan.
  6. Add the milk to the spiced tea. Heat gently for another 2-3 minutes, or until warmed through. Do not boil.
  7. Remove from heat. Stir in honey and vanilla extract (if using).
  8. Strain the chai through a fine-mesh sieve into mugs to remove the tea leaves. Serve hot, or chill and serve over ice. Enjoy!
