How to Make Mini Sausage Rolls
- Preheat oven to 220°C (425°F).
- Remove crusts from 4 slices of bread (approximately 50g) and soak in hot water for 5 minutes.
- Squeeze out excess water thoroughly.
- In a bowl, combine the soaked bread, 250g sausage meat, 1/4 cup finely chopped onion, 1 tablespoon chopped fresh herbs (rosemary and thyme recommended), 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Mix well to combine all ingredients.
- Unroll approximately 12cm (4.7 inches) of thawed puff pastry sheet. Lightly brush the surface with water.
- Using a teaspoon, spoon a portion (approximately 1 tablespoon) of the meat mixture down the center of each pastry strip.
- Fold the pastry over the filling and firmly press the edges to seal.
- Using a sharp knife, cut each strip into 4 individual sausage rolls.
- Repeat steps 6-9 with the remaining meat mixture and pastry.
- Brush the tops of the sausage rolls with a beaten egg or milk for a golden glaze.
- Place the sausage rolls onto an ungreased baking tray, leaving some space between each one.
- Bake for 20-25 minutes, or until golden brown and cooked through. If baking from frozen, bake for 25-30 minutes.
