How to Make Mostly Clean Eating Granola Bars
- Preheat oven to 350°F (175°C). Line a 9x13 inch jelly roll pan with parchment paper.
- In a large bowl, combine 2 cups rolled oats, 1 cup almond flour, ½ cup chopped nuts (almonds, walnuts, or pecans), ½ cup unsweetened shredded coconut, ½ teaspoon ground cinnamon, ¼ teaspoon salt.
- Add ½ cup unsweetened applesauce and ¼ cup agave nectar (or maple syrup) to the dry ingredients. Mix well until evenly moistened.
- Stir in ½ cup white chocolate chips and ½ cup craisins.
- Lightly grease your rolling pin or use a clean eating cooking spray to prevent sticking.
- Transfer the mixture to the prepared pan. Using the rolling pin, firmly press the mixture into an even layer.
- Bake for 15-20 minutes, or until golden brown and set.
- Let the granola bars cool completely in the pan before cutting.
- Once cool, cut into bars using a pizza cutter or sharp knife.
- Store in airtight freezer bags in the freezer for up to 2 months.
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
