How to Make Nonna's Pasta Sauce

  1. Preheat oven to 350°F (175°C).
  2. Place 1 lb of meat (beef, pork, or a mix) on a baking tray. Bake until juices run clear, about 20-25 minutes. Meanwhile, finely chop 1 large carrot and 1 large onion.
  3. Heat 2 tablespoons of olive oil in a large saucepan over medium heat. Add 4 cloves of minced garlic and sauté for 1 minute until fragrant. Add the chopped carrot and onion and 1 bay leaf. Sauté for 5 minutes, stirring occasionally.
  4. Add one (28 ounce) can of crushed tomatoes, 1/2 cup of dry red wine, and bring to a boil.
  5. Reduce heat to low, simmer, and add the cooked meat (leaving it whole).
  6. Add 1 teaspoon dried oregano, 1/2 teaspoon dried basil, 1/4 teaspoon red pepper flakes (optional), and salt and pepper to taste.
  7. Simmer for 2 hours on low, stirring occasionally.
  8. Cook your favorite pasta according to package directions.
  9. Remove the meat from the sauce and set aside. Serve the sauce over pasta.
  10. Top with freshly grated Parmesan cheese.
  11. Slice the meat and serve alongside the pasta and sauce. Enjoy the melt-in-your-mouth goodness!
