How to Make Nonna's Pasta Sauce
- Preheat oven to 350°F (175°C).
- Place 1 lb of meat (beef, pork, or a mix) on a baking tray. Bake until juices run clear, about 20-25 minutes. Meanwhile, finely chop 1 large carrot and 1 large onion.
- Heat 2 tablespoons of olive oil in a large saucepan over medium heat. Add 4 cloves of minced garlic and sauté for 1 minute until fragrant. Add the chopped carrot and onion and 1 bay leaf. Sauté for 5 minutes, stirring occasionally.
- Add one (28 ounce) can of crushed tomatoes, 1/2 cup of dry red wine, and bring to a boil.
- Reduce heat to low, simmer, and add the cooked meat (leaving it whole).
- Add 1 teaspoon dried oregano, 1/2 teaspoon dried basil, 1/4 teaspoon red pepper flakes (optional), and salt and pepper to taste.
- Simmer for 2 hours on low, stirring occasionally.
- Cook your favorite pasta according to package directions.
- Remove the meat from the sauce and set aside. Serve the sauce over pasta.
- Top with freshly grated Parmesan cheese.
- Slice the meat and serve alongside the pasta and sauce. Enjoy the melt-in-your-mouth goodness!
