How to Make Not Too Sweet Sweet Potatoes
- Preheat oven to 375°F (190°C).
- Wash and pierce 1 lb (450g) sweet potatoes several times with a fork.
- Roast sweet potatoes directly on the oven rack for 45 minutes, or until tender.
- While sweet potatoes roast, peel and quarter 2 ripe bananas.
- In a separate, greased baking dish, roast the bananas at 375°F (190°C) for 10 minutes.
- Once sweet potatoes are cooked, let them cool slightly, then scoop the flesh into a large bowl.
- Add the roasted bananas to the sweet potato bowl.
- Add the following ingredients: 2 tablespoons olive oil, 1/4 teaspoon salt, 1/8 teaspoon black pepper, and 1/4 teaspoon cinnamon.
- Using a hand mixer or potato masher, whip the sweet potato and banana mixture until creamy.
- Grate the zest of 1 lime over the top of the mixture.
