How to Make Old Fashioned Cheesecakes

  1. Preheat oven to 190°C (375°F).
  2. On a lightly floured surface, roll out the pastry to about 3mm thickness.
  3. Using a 7cm biscuit cutter, cut out 12 rounds of pastry.
  4. Gently press the pastry rounds into 12 individual patty tins.
  5. Spread about ½ teaspoon of jam onto each pastry round.

  8. In a separate bowl, sift together the self-raising flour and baking powder.

  10. Add milk, 1 tablespoon at a time, until the batter reaches a soft dropping consistency.
  11. Evenly spoon the batter into the prepared patty tins, filling each about ¾ full.
  12. If desired, top each cheesecake with thin strips of leftover pastry.
  13. Bake for 20-25 minutes, or until golden brown and the cakes spring back when lightly touched.
  14. Let the cheesecakes cool in the tins for a few minutes before transferring them to a wire rack to cool completely.
  15. Once cool, dust with sifted icing sugar and serve immediately.
