How to Make Peanut Butter Muesli Squares

  1. Grease a 20cm x 30cm lamington pan.
  2. Line the base and sides with baking paper.
  3. Spread half (approximately 100g) of the desiccated coconut evenly over the base of the prepared pan.
  4. In a medium saucepan, combine the peanut butter (250g), honey (100g), milk (100ml), muesli (250g), and vanilla extract (1 tsp).
  5. Stir over low heat for 15 minutes, stirring frequently, until the mixture thickens and is well combined.
  6. Pour the peanut butter mixture evenly over the layer of coconut in the pan.
  7. Sprinkle the remaining desiccated coconut (approximately 100g) evenly over the top.
  8. Cover the pan and refrigerate for at least 2 hours, or until firm.
  9. Once firm, lift the slab out of the pan using the baking paper. Cut into squares and serve. Enjoy!
