How to Make Real Deal Enchiladas
- Brown 1 lb ground beef in a large skillet over medium-high heat, breaking it up with a spoon. Drain off any excess grease.
- Stir in 1/4 cup of the enchilada sauce and 1/2 cup refried beans. Mix well and remove from heat.
- Heat 2 tablespoons of vegetable oil in a separate skillet over medium heat.
- Heat 1 cup of enchilada sauce in a small saucepan over low heat.
- Using tongs, quickly dip each tortilla into the hot oil for a few seconds per side, then immediately dip into the heated enchilada sauce to coat completely. (Work quickly to avoid burning yourself!)
- Lay the coated tortilla flat on a plate. Caution: tortillas will be hot.
- Spoon approximately 1/4 cup of the beef mixture onto the center of each tortilla.
- Sprinkle generously with shredded cheese.
- Roll up the tortilla tightly and place seam-side down in a greased 9x13 inch baking dish.
- Repeat steps 5-9 with the remaining tortillas.
- Bake at 350°F (175°C) for 20 minutes.
- Remove from oven and pour the remaining 1 cup enchilada sauce evenly over the enchiladas. Top with the remaining cheese and sliced black olives.
- Return to the oven for another 10-15 minutes, or until the cheese is melted, bubbly, and lightly browned.
- Let stand for a few minutes before serving. Garnish with your favorite toppings, such as sour cream, avocado, or cilantro.
