How to Make Real Deal Enchiladas

  1. Brown 1 lb ground beef in a large skillet over medium-high heat, breaking it up with a spoon. Drain off any excess grease.
  2. Stir in 1/4 cup of the enchilada sauce and 1/2 cup refried beans. Mix well and remove from heat.
  3. Heat 2 tablespoons of vegetable oil in a separate skillet over medium heat.
  4. Heat 1 cup of enchilada sauce in a small saucepan over low heat.
  5. Using tongs, quickly dip each tortilla into the hot oil for a few seconds per side, then immediately dip into the heated enchilada sauce to coat completely. (Work quickly to avoid burning yourself!)
