How to Make Awesome Enchiladas

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, brown 1 lb ground beef (or turkey) over medium-high heat with 1/2 medium onion, chopped.
  3. Add 1 (4 oz) can chopped green chilies, 2 cloves garlic (minced), 1 tsp chili powder, 1/2 tsp cumin, and 1/4 tsp salt. Cook until thoroughly heated through, about 5 minutes.
  4. Stir in 3/4 cup enchilada sauce, 1 (4 oz) can diced green chilies (undrained), 1 clove garlic (minced), 1/2 tsp Old Bay seasoning, 4 oz cream cheese (softened), and 1/2 cup sour cream. Cook until cream cheese is melted and sauce is smooth.
  5. Stir in 3/4 cup shredded cheddar cheese and 3/4 cup shredded Monterey Jack cheese.
  6. Fill each of 12 corn tortillas with about 1/4 cup of the meat mixture.
  7. Roll up tightly and place seam-side down in a lightly greased 9x13 inch baking dish.
  8. Pour the remaining enchilada sauce over the enchiladas.
  9. Sprinkle with the remaining 1/2 cup shredded cheddar and Monterey Jack cheese.
