How to Make Rustic Sausage With Potatoes Casserole

  1. Fry 4 slices of bacon in a heavy skillet over medium heat until browned (8-10 minutes). Remove with a slotted spoon and set aside.
  2. In the same skillet, fry 2 lbs potatoes, cut into 1-inch cubes, in the bacon grease until golden brown (12-15 minutes). Add 2 tbsp olive oil if needed. Remove with a slotted spoon and set aside.
  3. In a large bowl, combine the cooked potatoes with 1 (15-ounce) can black beans, rinsed and drained.
  4. Discard the bacon grease and wipe the skillet clean.
  5. Add 1/4 cup Italian dressing to the skillet and cook 1 medium onion, chopped, 1 cup carrots, chopped, and 1 lb kielbasa sausage, sliced, over medium heat until softened (12-15 minutes).
  6. Stir in 1/2 cup red wine, 1 cup chicken broth, 1 (6-ounce) can tomato paste, 1 tsp dried thyme, and the cooked bacon.
  7. Simmer for 5 minutes.
  8. Preheat oven to 350°F (175°C).
  9. Lightly grease a 2-4 quart casserole dish.
  10. Ladle 1/3 of the tomato mixture into the casserole dish.
  11. Spread half of the potato and bean mixture over the tomato mixture.
  12. Repeat layers with another 1/3 of the tomato mixture and the remaining potatoes and beans.
  13. Top with the remaining tomato mixture.
  14. Sprinkle 1/2 cup breadcrumbs over the top and drizzle with 2 tbsp melted butter.
  15. Sprinkle with 1/4 cup chopped cilantro.
  16. Bake for 60 minutes, or until heated through and bubbly.
