How to Make Simply Rich Cheddar Scalloped Potatoes
- Preheat oven to 350°F (175°C).
- Melt margarine in a large pot over medium heat. Add chopped onion and sauté until softened but not browned (about 5 minutes).
- In a small bowl, whisk together flour, salt, and pepper.
- Gradually whisk the flour mixture into the onion mixture. Continue whisking until smooth.
- Add milk and half-and-half. Cook, stirring constantly, until the sauce thickens slightly (about 2-3 minutes).
- Remove from heat. Stir in 1 1/2 cups of shredded cheddar cheese until melted and smooth.
