How to Make Spicy Green Rice

  1. Blanch 1 cup packed spinach leaves, 1/2 cup packed mint leaves, and 1/4 cup packed cilantro leaves in boiling water for 1 minute. Immediately plunge into ice water to stop the cooking process. Drain well.

  3. Heat 2 tablespoons of vegetable oil in a heavy-bottomed pot or pan over medium heat.

  6. Fry until the onions are light golden brown, about 5 minutes.
  7. Stir in the green paste and cook for 2-3 minutes, until the raw smell disappears.
  8. Add 1 1/2 cups basmati rice (rinsed thoroughly), 3 cups water, and 1 teaspoon salt.
  9. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until the rice is cooked through and the water is absorbed.
  10. Fluff the rice with a fork and garnish with fresh cilantro leaves before serving hot.
