How to Make Spicy Passion Fruit Glazed Shrimp

  1. In a small saucepan, combine 1/2 cup water and 1/4 cup granulated sugar. Bring to a boil over medium heat, stirring until the sugar dissolves completely.
  2. Stir in 1/2 cup passion fruit pulp and cook for 1 minute, stirring constantly.
  3. Remove from heat and let cool for 15 minutes.
  4. Line a fine-mesh sieve with cheesecloth or a coffee filter. Place the sieve over a large bowl and pour the passion fruit mixture into the sieve. Press firmly with the back of a spoon to extract as much pulp as possible, discarding the seeds.
  5. Whisk in 2 tablespoons lime juice, 1 tablespoon soy sauce, 1/2 teaspoon red pepper flakes (or to taste), and 1/4 teaspoon salt.
  6. Set aside 1/2 cup of the passion fruit glaze.
  7. Add the shrimp to the remaining passion fruit mixture in the bowl. Toss gently to coat evenly.
  8. Cover and refrigerate for at least 15 minutes (or up to 30 minutes) to allow the shrimp to marinate.
  9. Preheat your grill to medium-high heat.
  10. Thread 4 shrimp onto each of 8 skewers.
  11. Lightly coat the grill grates with cooking spray.
  12. Place the skewers on the preheated grill. Grill for 2 minutes per side, or until the shrimp are pink and cooked through, basting occasionally with the reserved passion fruit glaze.
  13. Serve the Spicy Passion Fruit Glazed Shrimp Kebabs immediately over a bed of cooked basmati or jasmine rice. Garnish with lime wedges and a side of fresh green salad.
