How to Make Spicy Pork Ribs With Garlic And Tomatoes

  1. Preheat oven to 350°F (175°C).
  2. Season ribs generously with salt and pepper. Place in a large, flame-proof roasting pan.
  3. Pour 2 cups of diced tomatoes over the ribs and scatter 1/4 cup fresh basil leaves on top.
  4. In a large skillet over medium-high heat, cook 4 slices of bacon until crispy. Remove bacon and set aside, reserving 2 tablespoons of bacon grease.
  5. Add 4 cloves of minced garlic and 1 medium onion (chopped) to the skillet with the bacon grease. Cook until softened and browned, about 7 minutes.
  6. Pour in 1/2 cup dry red wine and simmer until reduced by half, about 10 minutes.
  7. Pour the onion mixture over the ribs. Cover the pan tightly with foil and bake for 2 1/2 to 3 hours, or until the meat is incredibly tender.
  8. Transfer the ribs to a plate, reserving the sauce in the roasting pan.
  9. Just before serving, heat 2 tablespoons of olive oil in the skillet over high heat.
  10. Add 4 cloves of minced garlic and sauté until fragrant and lightly golden, about 2 minutes.
  11. Stir in 2 tablespoons of red wine vinegar and 1/2 teaspoon of red pepper flakes. Simmer briefly.
  12. Pour the garlic mixture into the pan with the reserved rib sauce. Bring to a high simmer and reduce by about a third, about 10 minutes.
  13. Add the ribs back to the pan and toss to coat them in the sauce, reheating them for a few minutes.
  14. Serve immediately, garnished with crumbled bacon (optional) and fresh basil.
