How to Make 2000 Meatloaf
- Preheat oven to 350°F (175°C).
- Cook 4 slices bacon until crispy. Remove from pan and place on a paper towel to absorb excess grease. Crumble bacon once cooled.
- While bacon cooks, prepare the hash browns: Shred 2 medium potatoes.
- In a large bowl, combine 1 pound ground meat (beef, turkey, or a blend), crumbled bacon, 1 cup shredded hash browns, 1/2 cup chopped red bell pepper, 1 cup baby spinach (roughly chopped), 1/2 cup crumbled goat cheese, 2 large eggs, 1/4 cup chopped yellow onion, 2 cloves minced garlic, 1 tbsp olive oil, 1 teaspoon white pepper, and 1/2 teaspoon kosher salt. Mix thoroughly.
- In a small skillet, heat 1 tbsp olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add the chopped spinach to the skillet and cook for 5 minutes, stirring frequently, until wilted. Remove from heat and add to the meatloaf mixture.
- Transfer the meatloaf mixture to a greased 9x5 inch loaf pan.
- Bake for 60-75 minutes, or until the internal temperature reaches 160°F (71°C).
- Let the meatloaf rest for 5 minutes before slicing.
- While the meatloaf rests, fry 3-4 eggs to your liking in 1 tbsp unsalted butter. Season with salt and pepper.
- Serve meatloaf slices topped with fried eggs.
