How to Make 2000 Meatloaf

  1. Preheat oven to 350°F (175°C).
  2. Cook 4 slices bacon until crispy. Remove from pan and place on a paper towel to absorb excess grease. Crumble bacon once cooled.
  3. While bacon cooks, prepare the hash browns: Shred 2 medium potatoes.
  4. In a large bowl, combine 1 pound ground meat (beef, turkey, or a blend), crumbled bacon, 1 cup shredded hash browns, 1/2 cup chopped red bell pepper, 1 cup baby spinach (roughly chopped), 1/2 cup crumbled goat cheese, 2 large eggs, 1/4 cup chopped yellow onion, 2 cloves minced garlic, 1 tbsp olive oil, 1 teaspoon white pepper, and 1/2 teaspoon kosher salt. Mix thoroughly.
  5. In a small skillet, heat 1 tbsp olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
