Ingredients for 3 Pepper Pasta

  • Green Bell Pepper
  • Red Bell Pepper
  • Yellow Bell Pepper
  • 2 tablespoons olive oil
  • Garlic Cloves
  • Red Onion
  • Mushroom
  • Italian Sausage
  • 1 tablespoon dried basil OR 2 tablespoons fresh basil
  • 1 teaspoon sugar
  • 2 tablespoons red wine vinegar
  • 1 lb penne pasta

How to Make 3 Pepper Pasta

  1. Brown 1 lb Italian sausage in a large skillet, crumbling it with a fork. Remove from skillet and set aside. Drain excess grease.
  2. Heat 2 tablespoons olive oil in the same skillet over medium heat.
  3. Add 1 medium onion, chopped, and cook until softened, about 5 minutes.
  4. Add 8 oz cremini mushrooms, sliced, and 2 cloves garlic, minced, and cook for 3-4 minutes.
  5. Add 1 red bell pepper, 1 yellow bell pepper, and 1 orange bell pepper (all chopped) and cook until tender-crisp, about 7-10 minutes.
  6. Stir in 2 tablespoons red wine vinegar and 1 teaspoon sugar.
  7. If using sausage, return it to the skillet.
  8. Add 1 tablespoon dried basil (or 2 tablespoons fresh basil, added in step 10).
  9. Cook for 1 minute more.
  10. If using fresh basil, stir in now.
  11. Toss the sauce with 1 lb cooked penne pasta.
  12. Serve immediately, topped with grated Parmesan cheese to taste.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
