- 2 tablespoons red wine vinegar
- 1 lb penne pasta
How to Make 3 Pepper Pasta
- Brown 1 lb Italian sausage in a large skillet, crumbling it with a fork. Remove from skillet and set aside. Drain excess grease.
- Heat 2 tablespoons olive oil in the same skillet over medium heat.
- Add 1 medium onion, chopped, and cook until softened, about 5 minutes.
- Add 8 oz cremini mushrooms, sliced, and 2 cloves garlic, minced, and cook for 3-4 minutes.
- Add 1 red bell pepper, 1 yellow bell pepper, and 1 orange bell pepper (all chopped) and cook until tender-crisp, about 7-10 minutes.
- Stir in 2 tablespoons red wine vinegar and 1 teaspoon sugar.
- If using sausage, return it to the skillet.
- Add 1 tablespoon dried basil (or 2 tablespoons fresh basil, added in step 10).
- Cook for 1 minute more.
- If using fresh basil, stir in now.
- Toss the sauce with 1 lb cooked penne pasta.
- Serve immediately, topped with grated Parmesan cheese to taste.
