- 1 pound butternut squash, peeled, seeded, and cubed
- 2 tablespoons water
- 1 pound acorn squash, peeled, seeded, and cubed
- 2 tablespoons butter
- 1/2 cup chopped fennel
- Onion
- Havarti Cheese
- Mascarpone Cheese
- Salt & Pepper
How to Make A Butternut Acorn Squash Gratin
- Preheat oven to 400°F (200°C). Grease a 2-quart casserole dish with 1 tablespoon butter.
- Place 1 pound cubed butternut squash in a large microwave-safe dish with 1 tablespoon of water. Cover tightly.
- Microwave on high for 7 minutes, or until tender, stirring halfway through. Drain.
- Repeat steps 2 and 3 with 1 pound cubed acorn squash and 1 tablespoon of water.
- Melt 2 tablespoons of butter in a large skillet over medium heat.
- Add 1/2 cup chopped fennel and 1/2 cup chopped onion. Cook, stirring frequently, for about 10 minutes, or until the onion is tender.
- Remove from heat and stir in 1 cup shredded Gruyere cheese, 1/2 cup shredded Parmesan cheese, the cooked butternut and acorn squash. Season generously with salt and pepper to taste.
- Transfer the mixture to the prepared casserole dish.
- Bake for 20-25 minutes, or until lightly browned and bubbly.
- Let stand for 5-10 minutes before serving.
