  • 1 pound butternut squash, peeled, seeded, and cubed
  • 2 tablespoons water
  • 1 pound acorn squash, peeled, seeded, and cubed
  • 2 tablespoons butter
  • 1/2 cup chopped fennel
  • Onion
  • Havarti Cheese
  • Mascarpone Cheese
  • Salt & Pepper

How to Make A Butternut Acorn Squash Gratin

  1. Preheat oven to 400°F (200°C). Grease a 2-quart casserole dish with 1 tablespoon butter.
  2. Place 1 pound cubed butternut squash in a large microwave-safe dish with 1 tablespoon of water. Cover tightly.
  3. Microwave on high for 7 minutes, or until tender, stirring halfway through. Drain.
  4. Repeat steps 2 and 3 with 1 pound cubed acorn squash and 1 tablespoon of water.
  5. Melt 2 tablespoons of butter in a large skillet over medium heat.
  6. Add 1/2 cup chopped fennel and 1/2 cup chopped onion. Cook, stirring frequently, for about 10 minutes, or until the onion is tender.
  7. Remove from heat and stir in 1 cup shredded Gruyere cheese, 1/2 cup shredded Parmesan cheese, the cooked butternut and acorn squash. Season generously with salt and pepper to taste.
  8. Transfer the mixture to the prepared casserole dish.
  9. Bake for 20-25 minutes, or until lightly browned and bubbly.
  10. Let stand for 5-10 minutes before serving.
