- Dried Pinto Beans
- 1 medium yellow onion, chopped

- 12 ounces beer (any light beer works well)
- Roma Tomatoes
- Jalapeno Pepper
- 1 teaspoon sugar (omit if using canned beans)
- 1/2 teaspoon salt (omit if using canned beans)
- Fresh Ground Pepper
- Cilantro Leaf
How to Make Beans And Beer
- If using dried beans, rinse them thoroughly. Place in a pot, cover with at least 3 inches of water, and bring to a boil over medium-high heat. Reduce heat to low, cover, and simmer for about 1 hour, or until tender. Drain and rinse.
- While beans are cooking (or if using canned beans), combine the chopped onion and minced garlic in a large, heavy pot. Cook over low heat, covered, for 5-7 minutes, or until softened and translucent. Add a little water if needed to prevent sticking.
- Add the cooked or canned beans, beer, diced tomatoes, jalapeño, sugar (if using), salt (if using), and black pepper to the pot.
- Bring to a simmer, cover, and cook for 30 minutes.
- Remove from heat and let cool to room temperature. This allows the flavors to meld.
- Stir in the fresh cilantro.
