How to Make A Taste Of Summer Citrus Salad

  1. Clean, peel, and cut the following fruits into bite-sized pieces and place in a large mixing bowl: 2 oranges, 1 grapefruit, 1 cup of raspberries, 1 cup of strawberries, 1/2 cup of blueberries
  2. Add 3/4 cup granulated sugar to the fruit. Gently toss to combine and refrigerate for at least 30 minutes to allow the sugar to start drawing out juices.
  3. While the fruit chills, prepare the orange syrup:
  4. In a small saucepan over medium heat, combine 1 cup fresh orange juice and the remaining 3/4 cup granulated sugar.
  5. Bring the mixture to a boil, then reduce heat to a simmer. Cook for 15-20 minutes, stirring frequently, until the syrup has reduced by half and thickened slightly. Watch closely to prevent scorching.
  6. Remove the syrup from the heat and let it cool completely to room temperature before proceeding.
  7. Once the fruit has chilled and the syrup is cool, pour the syrup over the chilled fruit.
  8. Gently stir to coat the fruit evenly.
  9. Add 2 tablespoons of finely minced fresh spearmint (optional, but highly recommended!). Stir to combine.
  10. Refrigerate the salad for at least 2-3 hours, or preferably overnight, to allow the flavors to meld and the salad to chill thoroughly before serving.
