How to Make A Taste Of Summer Citrus Salad
- Clean, peel, and cut the following fruits into bite-sized pieces and place in a large mixing bowl: 2 oranges, 1 grapefruit, 1 cup of raspberries, 1 cup of strawberries, 1/2 cup of blueberries
- Add 3/4 cup granulated sugar to the fruit. Gently toss to combine and refrigerate for at least 30 minutes to allow the sugar to start drawing out juices.
- While the fruit chills, prepare the orange syrup:
- In a small saucepan over medium heat, combine 1 cup fresh orange juice and the remaining 3/4 cup granulated sugar.
- Bring the mixture to a boil, then reduce heat to a simmer. Cook for 15-20 minutes, stirring frequently, until the syrup has reduced by half and thickened slightly. Watch closely to prevent scorching.
- Remove the syrup from the heat and let it cool completely to room temperature before proceeding.
- Once the fruit has chilled and the syrup is cool, pour the syrup over the chilled fruit.
- Gently stir to coat the fruit evenly.
- Add 2 tablespoons of finely minced fresh spearmint (optional, but highly recommended!). Stir to combine.
