How to Make Adas Polow
- Rinse the basmati rice thoroughly and soak in cold water for 3-4 hours.
- Drain the soaked rice and cook in a non-stick pot with 4 cups of salted water over medium-high heat for 10-15 minutes, or until the rice is just softened. Do not overcook.
- Drain the cooked rice thoroughly and set aside.
- In a separate pot, bring 2-3 cups of water to a boil.

- Layer half of the cooked rice in the pot.
- Top with the meat mixture, lentils, raisins, and dates.
- Add the remaining rice on top.
- Cover the pot and cook over very low heat for about 20 minutes, or until the rice is cooked through and the bottom layer is slightly crispy.
- Meanwhile, dissolve the saffron threads in 1/3 cup of hot water.
- Gently fluff the rice with a fork, drizzle with the saffron water, and mix well.
