Ingredients for Adas Polow

  • Lentils
  • Basmati Rice
  • Ground Beef
  • 1/2 cup pitted dates, chopped
  • 1/2 cup raisins
  • A pinch of saffron threads
  • 2 medium onions, thinly sliced
  • Cooking Oil
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)

How to Make Adas Polow

  1. Rinse the basmati rice thoroughly and soak in cold water for 3-4 hours.
  2. Drain the soaked rice and cook in a non-stick pot with 4 cups of salted water over medium-high heat for 10-15 minutes, or until the rice is just softened. Do not overcook.
  3. Drain the cooked rice thoroughly and set aside.
  4. In a separate pot, bring 2-3 cups of water to a boil.
  5. Add the rinsed lentils and a pinch of salt. Reduce heat to medium and simmer for 15-20 minutes, or until tender but not mushy.
  6. While the lentils simmer, thinly slice the onions and sauté in 2 tablespoons of oil until slightly golden brown.
  7. Add the ground beef or lamb, salt, and black pepper to the onions. Brown the meat over medium heat for about 10 minutes, breaking it up with a spoon.
  8. Pour in 1 cup of hot water and simmer until most of the water is absorbed.
  9. Wash the raisins and chop the dates.
  10. In the non-stick pot, heat 1/2 cup of water and 1 tablespoon of oil.
  11. Layer half of the cooked rice in the pot.
  12. Top with the meat mixture, lentils, raisins, and dates.
  13. Add the remaining rice on top.
  14. Cover the pot and cook over very low heat for about 20 minutes, or until the rice is cooked through and the bottom layer is slightly crispy.
  15. Meanwhile, dissolve the saffron threads in 1/3 cup of hot water.
  16. Gently fluff the rice with a fork, drizzle with the saffron water, and mix well.
