Ingredients for Adas Polow
- Lentils
- Basmati Rice
- Ground Beef
- 1/2 cup pitted dates, chopped
- 1/2 cup raisins
- A pinch of saffron threads
- 2 medium onions, thinly sliced
- Cooking Oil
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper (or to taste)
How to Make Adas Polow
- Rinse the basmati rice thoroughly and soak in cold water for 3-4 hours.
- Drain the soaked rice and cook in a non-stick pot with 4 cups of salted water over medium-high heat for 10-15 minutes, or until the rice is just softened. Do not overcook.
- Drain the cooked rice thoroughly and set aside.
- In a separate pot, bring 2-3 cups of water to a boil.
- Add the rinsed lentils and a pinch of salt. Reduce heat to medium and simmer for 15-20 minutes, or until tender but not mushy.
- While the lentils simmer, thinly slice the onions and sauté in 2 tablespoons of oil until slightly golden brown.
- Add the ground beef or lamb, salt, and black pepper to the onions. Brown the meat over medium heat for about 10 minutes, breaking it up with a spoon.
- Pour in 1 cup of hot water and simmer until most of the water is absorbed.
- Wash the raisins and chop the dates.
- In the non-stick pot, heat 1/2 cup of water and 1 tablespoon of oil.
- Layer half of the cooked rice in the pot.
- Top with the meat mixture, lentils, raisins, and dates.
- Add the remaining rice on top.
- Cover the pot and cook over very low heat for about 20 minutes, or until the rice is cooked through and the bottom layer is slightly crispy.
- Meanwhile, dissolve the saffron threads in 1/3 cup of hot water.
- Gently fluff the rice with a fork, drizzle with the saffron water, and mix well.
- Garnish and serve hot. Enjoy your delicious Adas Polow!
