How to Make African Piri Piri Kabobs
- Peel and cube 1 pound of sweet potatoes into 1 1/4-inch pieces.
- Boil the sweet potato cubes in lightly salted water for 5 minutes, or until slightly tender. Drain and let cool slightly.
- Prepare 4 long metal skewers. Alternately thread the sweet potatoes, 1 pound of venison or beef (cut into 1 1/4-inch pieces), and 1 large sweet pepper (cut into 1 1/4-inch pieces) onto the skewers, leaving a 1/4-inch space between each piece.
- Drizzle the kabobs generously with 2 tablespoons of olive oil.
- Sprinkle generously with piri-piri spice (amount to taste).
- Preheat your grill to medium heat. Lightly oil the grill rack.
- Place the kabobs on the preheated grill rack and cook for 25-35 minutes, turning occasionally, until the sweet potatoes are tender and the meat is cooked through. Internal temperature of meat should reach 160°F (71°C).
- Remove from grill and let rest for a few minutes before serving.
Chef's Tip for Extra Flavor
Elevate your dish with simple flavor boosters! A final flourish of freshly chopped herbs can add incredible brightness, while a squeeze of lemon or lime juice right before serving can awaken all the flavors. Don't underestimate a sprinkle of quality finishing salt or a drizzle of good olive oil to make your creation shine.
