  2. Add 1 ½ cups chicken stock and bring to a gentle simmer.
  3. Stir in 1 cup rice, 1 cup black beans (rinsed and drained), ½ cup water, ½ teaspoon salt, ¼ teaspoon black pepper, 1 tablespoon chopped cilantro, and 1 tablespoon lime juice. Bring back to a simmer.
