- Preheat oven to 400°F (200°C).
- Choose your onion: 1 medium onion (yellow, white, or red), 1/2 cup thinly sliced green onions, or 2 shallots, finely chopped.
- Choose your beverage: 1 cup beer (any light beer works well) or 1 cup dry Chardonnay.
- In a medium bowl, whisk together: 1/2 cup (1 stick) unsalted butter, melted; 1/4 cup all-purpose flour; 1 teaspoon paprika; 1/2 teaspoon garlic powder; 1/4 teaspoon cayenne pepper (optional); 1/2 teaspoon salt; 1/4 teaspoon black pepper; your chosen beverage; and your chosen onion.
- Rinse 1 pound of shrimp under cold water and pat dry. Remove any veins.
- In a large baking dish (approximately 9x13 inches), layer the shrimp. Top with 1 lemon, thinly sliced. Then, top with the sliced onions.
- Pour the butter mixture evenly over the shrimp and lemon slices.
