Ingredients for Alfredo Perfecto
- Dry Penne Pasta
- Fresh Broccoli
- 1 pound cooked shrimp (pre-cooked or quickly sautéed)
- 4 tablespoons butter
- All Purpose Flour
- Evaporated Low Fat Milk
- Low Sodium Chicken Broth
- 1 cup grated Parmesan cheese
- Freshly ground black pepper to taste
How to Make Alfredo Perfecto
- Bring a large pot of salted water to a boil. Add 1 pound penne pasta and cook until al dente according to package directions. Drain well and set aside.
- While pasta cooks, wash and trim 1 large head of broccoli. Cut into bite-sized florets. Microwave on high for 3-4 minutes, or until crisp-tender. Drain well and set aside.
- Have 1 pound cooked shrimp (pre-cooked or quickly sautéed) ready in the refrigerator.
- In a large heavy saucepan, melt 4 tablespoons of butter over medium heat.
- Whisk in 1/4 cup all-purpose flour until smooth.
- Gradually whisk in 2 cups whole milk and 1/2 cup chicken broth, whisking constantly to prevent lumps.
- Bring the sauce to a gentle boil, then reduce heat to low and stir in 1 cup grated Parmesan cheese.
- Stir until the cheese is melted and the sauce is smooth and creamy.
- Add the cooked broccoli and shrimp to the sauce. Stir to combine.
- Let the mixture simmer for 1-2 minutes, just until the shrimp is heated through.
- Season with freshly ground black pepper to taste.
- Remove from heat and gently stir in the drained pasta.
- Serve immediately in a warm bowl, garnished with extra Parmesan cheese (optional).
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
