Ingredients for Avocado Salsa Pasta

  • Bow Tie Pasta
  • 1/4 cup red onion, finely chopped
  • 1 ripe avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • Fresh Coriander
  • Fresh Lime Juice
  • 2 tablespoons olive oil
  • Red Chile
  • 2 cloves garlic, minced
  • 6 ounces crab meat
  • salt and pepper to taste

How to Make Avocado Salsa Pasta

  1. Cook 8 ounces of pasta according to package directions. Reserve 1/2 cup of pasta water before draining.
  2. While pasta cooks, prepare the salsa: finely chop 1/4 cup red onion, 1 ripe avocado (diced), 1/2 cup cherry tomatoes (halved), and 1/4 cup fresh coriander (cilantro).
  3. In a medium bowl, combine the chopped red onion, avocado, tomatoes, coriander, juice of 1 lime, and 1 tablespoon olive oil. Season generously with salt and pepper.
  4. In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat.
  5. Add 2 cloves minced garlic and 1-2 finely chopped chili peppers (adjust to your spice preference). Sauté for 30 seconds until fragrant.
  6. Add 6 ounces of crab meat to the skillet and cook for 2-3 minutes, until heated through.
  7. Add the drained pasta to the skillet with the crab meat. Toss to combine. If the sauce is too thick, add a little of the reserved pasta water.
  8. Spoon the avocado salsa generously over the pasta and crab mixture. Serve immediately and garnish with extra coriander, if desired.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
