- 1/4 cup red onion, finely chopped

How to Make Avocado Salsa Pasta
- Cook 8 ounces of pasta according to package directions. Reserve 1/2 cup of pasta water before draining.
- While pasta cooks, prepare the salsa: finely chop 1/4 cup red onion, 1 ripe avocado (diced), 1/2 cup cherry tomatoes (halved), and 1/4 cup fresh coriander (cilantro).
- In a medium bowl, combine the chopped red onion, avocado, tomatoes, coriander, juice of 1 lime, and 1 tablespoon olive oil. Season generously with salt and pepper.
- In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat.
- Add 2 cloves minced garlic and 1-2 finely chopped chili peppers (adjust to your spice preference). Sauté for 30 seconds until fragrant.
- Add 6 ounces of crab meat to the skillet and cook for 2-3 minutes, until heated through.
- Add the drained pasta to the skillet with the crab meat. Toss to combine. If the sauce is too thick, add a little of the reserved pasta water.
- Spoon the avocado salsa generously over the pasta and crab mixture. Serve immediately and garnish with extra coriander, if desired.
