How to Make All American Pancakes

  1. Preheat your griddle or large skillet to medium-high heat. Lightly grease with butter or oil.
  2. In a large bowl, crack and whisk together 2 large eggs.
  3. Stir in 1 ½ cups of milk and 2 tablespoons of vegetable oil.
  4. In a separate bowl, whisk together 2 cups all-purpose flour, ¼ cup granulated sugar, 2 teaspoons baking powder, and ½ teaspoon salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. A few lumps are okay!
  6. For thicker pancakes, add an additional ¼ cup of flour. For thinner pancakes, add an additional ¼ cup of milk.
  7. Pour ¼ cup of batter onto the hot griddle for each pancake.
  8. Cook for 2-3 minutes per side, or until golden brown and cooked through. Bubbles will appear on the surface before flipping.
  9. Serve immediately with your favorite toppings! Strawberries and whipped cream are classic choices. For a festive touch, add blueberries, especially during summer holidays like the Fourth of July or Memorial Day weekend.
