Ingredients for Almond Roca Gourmet Popcorn

  • 10 cups popped popcorn (about 1/2 cup kernels)
  • 1/2 cup (1 stick) unsalted butter
  • Brown Sugar
  • Sugar
  • 1/4 teaspoon salt
  • Light Corn Syrup
  • Natural Almonds
  • 1 teaspoon baking soda
  • 1 teaspoon butter extract

How to Make Almond Roca Gourmet Popcorn

  1. Preheat oven to 225°F (107°C). Lightly grease a large roasting pan with non-stick cooking spray.
  2. Place popped popcorn in the prepared roasting pan and set aside.
  3. In a medium saucepan over low heat, combine granulated sugar, butter, salt, and corn syrup.
  4. Bring the mixture to a soft boil, stirring constantly. Once boiling, cover the pan and let it boil for 30 seconds.
  5. Remove the lid and stir vigorously with a clean spoon to dissolve any remaining sugar and salt crystals.
  6. Reduce heat to low and let the mixture boil gently, uncovered, for 5 minutes, stirring constantly.
  7. Remove from heat and immediately stir in the baking soda. The mixture will foam – this is normal.
  8. Stir until the baking soda is completely dissolved.
  9. Stir in the butter extract.
  10. Slowly pour the caramel mixture over the popcorn, stirring gently and continuously to coat all the popcorn evenly.
  11. Add the slivered almonds and stir well to combine.
  12. Spread the popcorn mixture evenly in the prepared roasting pan.
  13. Bake for 1 hour, stirring and mixing the popcorn every 15 minutes to ensure even cooking and browning.
  14. Once baked, pour the popcorn onto a non-stick surface to cool completely before serving. Enjoy!

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
