How to Make Almond Roca Gourmet Popcorn
- Preheat oven to 225°F (107°C). Lightly grease a large roasting pan with non-stick cooking spray.
- Place popped popcorn in the prepared roasting pan and set aside.
- In a medium saucepan over low heat, combine granulated sugar, butter, salt, and corn syrup.
- Bring the mixture to a soft boil, stirring constantly. Once boiling, cover the pan and let it boil for 30 seconds.
- Remove the lid and stir vigorously with a clean spoon to dissolve any remaining sugar and salt crystals.
- Reduce heat to low and let the mixture boil gently, uncovered, for 5 minutes, stirring constantly.
- Remove from heat and immediately stir in the baking soda. The mixture will foam – this is normal.
- Stir until the baking soda is completely dissolved.
- Stir in the butter extract.
- Slowly pour the caramel mixture over the popcorn, stirring gently and continuously to coat all the popcorn evenly.
- Add the slivered almonds and stir well to combine.
- Spread the popcorn mixture evenly in the prepared roasting pan.
- Bake for 1 hour, stirring and mixing the popcorn every 15 minutes to ensure even cooking and browning.
