  • 1/2 medium onion, chopped
  • 2 lbs potatoes
  • Corn

How to Make Almost Payday Casserole

  1. Brown 1 lb ground chuck with 1/2 medium onion, chopped, in a large skillet over medium-high heat. Break up the beef with a spoon as it cooks.
  2. Season the meat with 1 tsp salt and 1/2 tsp black pepper.
  3. Drain off any excess grease.
  4. Peel and boil 2 lbs potatoes until tender (about 15-20 minutes).
  5. Drain the potatoes well.
  6. Return the potatoes to the pot. Add 2 tablespoons margarine and 1/4 cup milk. Salt to taste.
  7. Mash until smooth.
  8. Grease a 2 1/2 quart oven-safe deep dish pan.
