- Combine 2 cups of fresh blueberries and 2 cups of water in a medium saucepan. Bring to a boil over medium-high heat.
- Reduce heat to low and simmer gently for 15 minutes to extract maximum blueberry flavor.
- Remove from heat. Place a cheesecloth-lined colander over a large bowl and pour the blueberry mixture through it.
- Let cool for 15 minutes.
- Gather the cheesecloth edges and gently squeeze to extract as much juice as possible, discarding the remaining pulp and skins.
- Return the blueberry juice (you should have approximately 1 ½ cups) to the saucepan. Add ¾ cup granulated sugar and 2 tablespoons of fresh lime juice.
- Place over medium-high heat and stir until the sugar is completely dissolved.
- Bring to a boil and cook for 2 minutes.
- Remove from heat. Transfer the blueberry syrup to a heatproof glass container. Let cool completely in the refrigerator, uncovered.
- To serve: Combine ¼ cup of the cooled blueberry syrup with 8 ounces of chilled carbonated water. Serve immediately over ice.
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
