How to Make Amazing Italian Tomato Soup
- Brown 1 pound of ground beef in a large skillet over medium-high heat. Drain off any excess grease and set aside in a covered bowl.
- Finely chop 1 medium onion, 2 stalks celery, and 2 cloves garlic.
- Slice 2 (28-ounce) cans of fire-roasted tomatoes, discarding the end pieces.
- Lightly spray the bottom of a 5-quart stewpot with cooking spray.
- Sauté the chopped onion, celery, and garlic in the stewpot over medium heat until the celery is fork-tender (about 5-7 minutes).
- Add 4 cups of chicken broth. For a thicker soup, reduce the broth to 3 cups.
- Bring to a gentle boil, then add the fire-roasted tomatoes, 1 teaspoon dried oregano, 1 teaspoon dried basil, 1/2 teaspoon dried thyme, and 1/4 teaspoon red pepper flakes.
- Continue to boil for about 5 minutes.
- Reduce heat to a simmer, and add the browned ground beef (optional: omit for a vegetarian version).
- Cover and simmer for 15-20 minutes, stirring occasionally.
- Season with salt and pepper to taste. Add more Italian seasoning as desired.
- Serve with a variety of toppings: shredded Italian cheese, grated Parmesan cheese, chopped spring onions, and seasoned breadcrumbs.
