How to Make Amazing Italian Tomato Soup

  1. Brown 1 pound of ground beef in a large skillet over medium-high heat. Drain off any excess grease and set aside in a covered bowl.
  2. Finely chop 1 medium onion, 2 stalks celery, and 2 cloves garlic.
  3. Slice 2 (28-ounce) cans of fire-roasted tomatoes, discarding the end pieces.
  4. Lightly spray the bottom of a 5-quart stewpot with cooking spray.
  5. Sauté the chopped onion, celery, and garlic in the stewpot over medium heat until the celery is fork-tender (about 5-7 minutes).
  6. Add 4 cups of chicken broth. For a thicker soup, reduce the broth to 3 cups.
  7. Bring to a gentle boil, then add the fire-roasted tomatoes, 1 teaspoon dried oregano, 1 teaspoon dried basil, 1/2 teaspoon dried thyme, and 1/4 teaspoon red pepper flakes.
