How to Make Batali S Simple Penne All Arrabbiata

  1. Bring 6 quarts of water to a boil in a large pot. Add 3 tablespoons of kosher salt.
  2. While the water is heating, heat 4 tablespoons of olive oil in a large sauté pan over medium heat.
  3. Add 2 tablespoons of tomato paste and 1/2 teaspoon of red pepper flakes to the pan.
  4. Reduce heat to low and cook, stirring frequently, until fragrant, about 4 minutes.
  5. Stir in the 28-ounce can of crushed tomatoes. Remove from heat.
  6. Add the 1 pound of penne pasta to the boiling water and cook until al dente, according to package directions.
  7. Reserve 1/4 cup of the pasta cooking water before draining the pasta.
