How to Make American Turkey Turnovers

  1. Saute 1 medium onion, chopped, and 2 stalks celery, chopped, in 4 tablespoons of butter until softened.
  2. Stir in 2 cups cooked turkey, 1/2 cup chicken broth, 1/4 cup chopped fresh parsley, 1/4 teaspoon sage, 1/4 teaspoon thyme, and salt and pepper to taste.
  3. In a separate bowl, sift together 2 1/2 cups all-purpose flour, 1 teaspoon curry powder, and 1 teaspoon salt.
  4. Cut in 1 cup cold vegetable shortening using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  5. Gradually add 1/4 cup ice water, mixing lightly with a fork until the dough just comes together. Add more ice water, 1 tablespoon at a time, if needed.
  6. Gently form the dough into a ball, wrap in plastic wrap, and chill for at least 30 minutes.
  7. On a lightly floured surface, roll out the dough to 1/8 inch thickness. Use a 6-inch cookie cutter or knife to cut out twelve circles.
  8. Spoon 2 heaping tablespoons of the turkey filling onto one half of each circle.
  9. Brush the edges of each circle with a little water.
  10. Fold the empty half over the filling to form a half-moon shape.
  11. Crimp the edges with a fork to seal and prick the top several times with a fork.
  12. Place the turnovers on a baking sheet lined with parchment paper.
  13. Freeze uncovered for at least 2 hours, or overnight.
  14. Once frozen, package the turnovers in freezer bags or foil for longer storage.
  15. To bake: Preheat oven to 425°F (220°C).
  16. Bake frozen turnovers for 45-60 minutes, or until golden brown and heated through. Baking time may vary depending on your oven and the size of your turnovers.
