Ingredients for Amigo Pie

  • Ground Beef
  • 1 medium onion, chopped
  • Chopped Tomato
  • Sliced Ripe Olives
  • Chili Powder
  • 1/2 teaspoon salt (plus additional for seasoning)
  • Pepper
  • 1 cup yellow cornmeal
  • 1/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • Hot Water
  • Butter
  • Sharp Cheddar Cheese

How to Make Amigo Pie

  1. Brown 1 pound of ground beef in a large skillet over medium-high heat. Break it up with a spoon as it cooks.
  2. Drain off any excess grease.
  3. Add 1 medium onion (chopped), 1 (14.5 ounce) can of diced tomatoes (undrained), 1/2 cup chopped green olives, 1 teaspoon chili powder, 1/2 teaspoon cumin, and salt and pepper to taste. Cook until the onion is softened, about 5-7 minutes.
  4. In a separate bowl, whisk together 1 cup yellow cornmeal, 1/4 cup all-purpose flour, 1/2 teaspoon salt, and 1 teaspoon baking powder.
  5. Gradually add 1 1/2 cups of water and 1/4 cup melted butter or margarine to the dry ingredients, whisking until smooth.
  6. Stir in 1 cup shredded cheddar cheese and 1/4 cup chopped green olives.
  7. Pour the cornmeal mixture into a greased 9-inch pie plate.
  8. Spoon the meat mixture into the center of the cornmeal mixture and gently press down.
  9. Bake in a preheated 400°F (200°C) oven for 25-30 minutes, or until the crust is golden brown and the filling is bubbly.
  10. Top with the remaining 1/2 cup shredded cheddar cheese during the last 5 minutes of baking.
  11. Garnish with additional olive slices, if desired. Let cool slightly before serving.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
