How to Make Amigo Pie
- Brown 1 pound of ground beef in a large skillet over medium-high heat. Break it up with a spoon as it cooks.
- Drain off any excess grease.
- Add 1 medium onion (chopped), 1 (14.5 ounce) can of diced tomatoes (undrained), 1/2 cup chopped green olives, 1 teaspoon chili powder, 1/2 teaspoon cumin, and salt and pepper to taste. Cook until the onion is softened, about 5-7 minutes.
- In a separate bowl, whisk together 1 cup yellow cornmeal, 1/4 cup all-purpose flour, 1/2 teaspoon salt, and 1 teaspoon baking powder.
- Gradually add 1 1/2 cups of water and 1/4 cup melted butter or margarine to the dry ingredients, whisking until smooth.
- Stir in 1 cup shredded cheddar cheese and 1/4 cup chopped green olives.
- Pour the cornmeal mixture into a greased 9-inch pie plate.
- Spoon the meat mixture into the center of the cornmeal mixture and gently press down.
- Bake in a preheated 400°F (200°C) oven for 25-30 minutes, or until the crust is golden brown and the filling is bubbly.
- Top with the remaining 1/2 cup shredded cheddar cheese during the last 5 minutes of baking.
- Garnish with additional olive slices, if desired. Let cool slightly before serving.
