- 3 tablespoons olive oil
- 1 pint cherry or grape tomatoes

How to Make Angel Hair Pasta With Vegetables Pine Nuts And Feta Cheese
- Cook 8 ounces of angel hair pasta in a large pot of boiling salted water for 3-4 minutes, or until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.
- While the pasta cooks, preheat oven to 400°F (200°C). Halve 1 pint of cherry or grape tomatoes and toss them on a baking sheet with 1 tablespoon olive oil, salt and pepper. Roast for 15-20 minutes, until slightly softened and blistered.
- Heat 2 tablespoons olive oil in a large skillet over medium heat. Add 2 cloves of minced garlic and cook for 30 seconds, until fragrant.
- Add 1/4 cup chopped green onions, 1/4 cup chopped fresh basil, and the roasted tomatoes to the skillet. Cook for 1-2 minutes, until heated through.
- Add the cooked pasta to the skillet and toss to combine. If the sauce is too thick, add a little of the reserved pasta water.
- Stir in 1/2 cup crumbled feta cheese until melted and creamy.
- Using tongs, transfer the pasta to a serving bowl. Using a rubber spatula, scrape any remaining sauce from the skillet over the pasta.
- Sprinkle 1/4 cup toasted pine nuts, 1 tablespoon crumbled feta cheese, and 1 tablespoon grated Parmesan cheese over the pasta. Garnish with fresh parsley and serve immediately.
