How to Make Ann S Easy Posole

  1. In a large pot or Dutch oven, combine 1 tbsp olive oil, 1 large onion (chopped), 2 cloves garlic (minced), and 1-2 tsp New Mexico chile powder (adjust to taste). Sauté for 5 minutes until fragrant.
  2. Add 1 (28 ounce) can of crushed tomatoes, 6 cups of chicken or vegetable broth, 1 (15 ounce) can of hominy (drained and rinsed), 1 tsp cumin, 1/2 tsp oregano (optional), and salt and pepper to taste.
  3. If using, add 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces) and/or 1 lb pork shoulder (cut into bite-sized pieces) to the pot.
  4. Bring the mixture to a boil over medium-high heat.
  5. Once boiling, reduce heat to low, cover, and simmer for 20-25 minutes, or until the chicken and/or pork are cooked through and the flavors have melded. If vegetarian, omit steps 3 and reduce simmer time to 15 minutes
