  1. Thaw 10 oz. of frozen spinach in the microwave or on the stovetop. Squeeze out excess water thoroughly.
  2. In a large bowl, whisk together 6 large eggs and 1/2 cup of milk.
  3. Stir in 1 cup of shredded cheese (Monterey Jack, mozzarella, or a blend).
  4. Pour the thawed and drained spinach into a greased 8x8 inch casserole dish.
  5. Pour the egg and cheese mixture evenly over the spinach.
  6. Gently stir to combine.
