How to Make Anytime Spinach Casserole
- Thaw 10 oz. of frozen spinach in the microwave or on the stovetop. Squeeze out excess water thoroughly.
- In a large bowl, whisk together 6 large eggs and 1/2 cup of milk.
- Stir in 1 cup of shredded cheese (Monterey Jack, mozzarella, or a blend).
- Pour the thawed and drained spinach into a greased 8x8 inch casserole dish.
- Pour the egg and cheese mixture evenly over the spinach.
- Gently stir to combine.
- Sprinkle the top with 1/2 cup crushed crackers and dot with 2 tablespoons of butter.
- Top with an additional 1/4 cup of shredded cheese.
