  • Unsweetened Applesauce
  • 1 large egg

  • Ground Cinnamon
  • 1/4 teaspoon salt

How to Make Applesauce Date Muffins

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease and flour the tin.
  2. In a medium bowl, combine 1 cup bran cereal and 1/2 cup applesauce. Let stand for 5 minutes to soften the cereal.
  3. Stir in 1 large egg, 1/2 cup chopped dates, 1/4 cup packed brown sugar, and 1/4 cup margarine (or Becel).
  4. In a large bowl, whisk together 1 1/2 cups all-purpose flour, 1 teaspoon baking soda, 1 teaspoon ground cinnamon, and 1/4 teaspoon salt.
  5. Gently fold the wet ingredients (from step 3) into the dry ingredients (from step 4) until just combined. Do not overmix.
  6. Fill muffin cups about 2/3 full.
