How to Make Applesauce Date Muffins
- Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease and flour the tin.
- In a medium bowl, combine 1 cup bran cereal and 1/2 cup applesauce. Let stand for 5 minutes to soften the cereal.
- Stir in 1 large egg, 1/2 cup chopped dates, 1/4 cup packed brown sugar, and 1/4 cup margarine (or Becel).
- In a large bowl, whisk together 1 1/2 cups all-purpose flour, 1 teaspoon baking soda, 1 teaspoon ground cinnamon, and 1/4 teaspoon salt.
- Gently fold the wet ingredients (from step 3) into the dry ingredients (from step 4) until just combined. Do not overmix.
- Fill muffin cups about 2/3 full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean and the muffins are golden brown.
- Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
