How to Make Apricot Citrus Preserves
- Combine 1 lb apricots (pitted and chopped), 1/2 cup raisins, zest and juice of 1 orange, zest and juice of 1/2 lemon, 1 tsp coriander seeds, 1 tsp ground cinnamon, 1/4 cup orange wine, and 1/2 cup water in a large bowl.
- Gently toss to ensure all ingredients are evenly distributed.
- Cover the bowl and refrigerate overnight (or for at least 8 hours) to allow the flavors to meld.
- The next day, transfer the fruit mixture to a large, heavy-bottomed saucepan. Bring to a gentle simmer over medium heat.
- Reduce heat to low and simmer gently, stirring occasionally, until the apricots are very tender, about 1 hour. Adjust heat as needed to maintain a gentle simmer; avoid scorching.
- Add 3 cups granulated sugar. Increase heat to medium-high and bring the mixture to a rolling boil, stirring constantly to prevent burning.
- Boil rapidly, stirring frequently, for 12-18 minutes, or until the setting point is reached. To test, drop a small spoonful of the preserves onto a chilled saucer. Let it cool for a minute; it's ready when a wrinkle forms on the surface when you run your finger through it.
- Remove from heat. Stir in 1/2 cup cashew pieces (optional) and 1 tsp almond extract.
