How to Make Apricot Dumplings Marillenkndel
- In a large bowl, combine 5 tablespoons (70g) melted butter, 250g cottage cheese, a pinch of salt, 2 large eggs, and approximately 250-300g all-purpose flour to form a soft, pliable dough. Add flour gradually until the dough comes together.
- Shape the dough into a smooth roll, about 1.5 inches in diameter.
- Cover the dough and let it rest at room temperature for 30 minutes.
- Wash and thoroughly dry approximately 250g fresh apricots.
- Cut the apricots in half.
- Remove and discard the pits from the apricot halves.
- Place one (5g) sugar cube between each pair of apricot halves.
- Set the prepared apricots aside.
- Bring a large pot of water to a gentle boil. Add 1 teaspoon of salt to the boiling water.
- On a lightly floured surface, roll or press the dough to a 1/2-inch thickness.
- Using a 2-inch cutter or knife, cut the dough into 2-inch squares.
- Place a stuffed apricot in the center of each dough square.
- Carefully press the dough around the fruit, completely enclosing it to form a dumpling.
- Gently add the dumplings to the boiling salted water.
- Cook for 8-10 minutes, or until the dumplings float to the surface and are cooked through.
- Remove the dumplings with a slotted spoon and drain them on paper towels.
- Arrange the cooked dumplings on a serving platter.
- In a medium skillet, melt 1/3 cup (70g) butter or margarine over medium heat.
- Add 1/2 cup (50g) breadcrumbs and 3 tablespoons (30g) granulated sugar.
- Sauté the breadcrumbs until they are golden brown and crispy, stirring frequently to prevent burning.
- Sprinkle the caramelized breadcrumbs generously over the dumplings.
Chef's Tip for Extra Flavor
Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
