  • Boneless Chicken Thighs
  • 1 tsp salt
  • Light Soy Sauce
  • 2 cloves garlic, minced
  • Fresh Ginger
  • 2 scallions, thinly sliced
  • Fermented Black Beans
  • Shaoxing Wine
  • Dried Chili Pepper Flakes
  • 1/2 red bell pepper, thinly sliced
  • Rice Vinegar
  • 1 tsp sesame oil
  • 2 tbsp peanut oil

How to Make Authentic Black Bean Chicken

  1. In a bowl, toss chicken with salt and soy sauce. Set aside.
  2. Heat peanut oil in a wok or large skillet over high heat.
  3. Add chicken and stir-fry until browned, about 3-5 minutes. Remove chicken and set aside.
  4. Drain all but 3 tablespoons of oil from the wok. Reduce heat to medium.
  5. Add ginger and garlic; stir-fry for 1-2 minutes until fragrant.
  6. Add black beans and stir-fry for 1 minute, splashing in the Shaoxing wine.
  7. Stir in chili flakes and cook for 30 seconds.
  8. Return chicken to the wok.
  9. Add red bell pepper and toss to combine. Stir in rice vinegar and season with additional salt to taste.
  10. When the sauce is slightly thickened, add scallions and stir until wilted (about 30 seconds).
  11. Remove from heat and stir in sesame oil. Serve immediately.
